Crêpes

Ingredients

  • ½ cup milk

  • ½ cup water

  • 2 large eggs

  • 2 tablespoons butter, melted

  • 1 cup all-purpose flour

  • ¼ teaspoon salt (if using unsalted butter, use 1 teaspoon)

Note: For thicker crepes, increase the milk and decrease the water, but make sure the liquid still equals one cup.

Directions

  1. In a blender, combine milk, water, eggs and melted butter. Add in salt and flour. Mix until smooth.

  2. Heat a lightly oiled griddle or frying pan over medium-high heat. Pour the batter onto the griddle, using approximately 1/4 cup for each crêpe. Tilt the pan with a circular motion so that the batter coats the surface evenly.

  3. Cook until the top of the crêpe shows bubbles popping, and the bottom has turned light brown. Flip and cook until the other side has turned light brown. Turn down heat as needed.
