White flour tortillas

Ingredients

  • 3 cups all purpose flour

  • 2 teaspoons baking powder

  • 1 1/2 teaspoons kosher salt

  • 5 tablespoons salted butter (at room temperature)

  • 1 cup hot water

Instructions

  1. In a mixing bowl, combine the flour, baking powder, and salt.

  2. Add the butter and the hot water, mixing until a ‘shaggy’ dough forms. (Shaggy dough is the rough, lumpy, and cohesive but not yet smooth texture of bread dough right after initial mixing, where all dry flour is incorporated but gluten hasn't fully developed, looking messy and uneven, and this is a crucial first stage before resting and kneading to achieve a smooth, elastic dough later.)

  3. Turn the dough out onto a floured counter. Use your hands to knead the dough for 1-2 minutes until it forms a smooth ball. Return to the bowl and cover with a wax sheet or damp tea towel for 10 minutes of rest.

  4. Cut the dough into 12-14 equal segments, and roll each into a ball. Use a rolling pin to roll thin.

  5. Heat a skillet over medium-high heat. Spray with oil, then add tortilla. Cook until little bubbles appear on the surface, about 1 minute. Flip and cook until slightly golden. Set on a plate and cover with a towel. Repeat with the remaining dough.
